- 2 tsp rapeseed oil
- 3 tsp mix Mexican spice
- 1 medium onion
- 2 peppers
- 2 tbsp. tomato paste
- 1 can chunky tomatoes
- 2 tbsp. granulated chicken stock
- 1 can beans
- 1 can corn
- 2 tbsp. cornflour
- 2 tablespoons lime juice
- Tortilla chips
- leaves Coriander
- Lime wedges
- Cheddar cheese

- Set the oven to 190 degrees.
- Prepare the baking dish by greasing it with butter or oil.
- Place the chicken breast filets on the baking dish and rub them with one teaspoon of oil and spice mixture.
