2 tsp rapeseed oil

One can of chunky tomatoes (400 g)

 

2 tbsp. granulated chicken stock

 

One can of beans (black or kidney) (250 g)

 

One can of corn (285 g)

 

Two tbsp. cornflour

 

Two tablespoons of lime juice

 

Toppings:

Tortilla chips

 

Coriander leaves, fresh

 

Lime wedges

Instructions for Making Red Robin Chicken Tortilla Soup

1.Set the oven to 190 degrees. Prepare the baking dish by greasing it with butter or oil.

 

2.Place the chicken breast filets on the baking dish and rub them with one teaspoon of oil and spice mixture.

 

3.In a hot oven, cook the chicken for 15 to 25 minutes (based on its size).

 

4.Pull the hot chicken apart with two forks after removing it from the oven.

 

5.Chop the onion into small pieces. Use a knife to make strips out of the bell pepper.

 

6.For 5 minutes, sauté the paprika strips and onion cubes in a large saucepan. Add half a teaspoon of the spice mixture, tomato paste, and sauté for three more minutes.

 

7.Stir in chunky tomatoes and chicken. Add one liter of boiled, hot water to the pot, add the granulated stock, and allow it to boil.

 

8.After draining the corn and beans, add them to the soup.

 

9.Add a little water to the cornmeal and stir until no lumps are left. Add this mixture to the soup and continually stir while simmering for 10 minutes. Combine pepper, salt, lime juice, and Mexican spice mixture to season the soup. Add toppings before serving and enjoy.
