  • 2 large onion chopped
  • 4 carrots Peeled and diced
  • 4 celery stalks diced
  • 2 garlic cloves minced

  • 1 teaspoon thyme
  • 1 bay leaf
  • ½ cup long-grain rice
  • ¼ cup parsley leaves
  • Salt and pepper
