For this recipe, I am utilising a 5-quart slow cooker, but you can also use a 6-quart slow cooker for this recipe.

Ingredients

  • 2 tbsp olive oil
  • 1 tablespoon coarse salt
  • One and a half pounds of lean beef stew meat
  • 1 tablespoon ground black pepper
  • 2 tbsp flour
  • 4 large diced golden potatoes
  • Two large peeled and diced carrots into 1-inch pieces
  • Two large peeled and diced parsnips into 1-inch pieces
  • Half large yellow chopped onion
  • 2 cloves minced garlic
  • 4 cups beef broth
  • 1 tbsp tomato paste
  • 11.2 fluid Oz bottle Guinness extra stout
  • Ground black pepper and coarse salt according to taste.

Instructions

  1. First of all, take a large Pan and heat the olive oil on medium to high heat and turn on the slow cooker.
  2. In the large bowl, toss the beef together with pepper, salt and flour to coat.
  3. Add to the pan and cook it until all the sides are brown.
  4. While your beef is browned, then add the carrot, potatoes, garlic, onion, and tomato paste into your slow cooker and mix it properly.
  5. After that, add the browned beef, Guinness and beef broth into your slow cooker and mix it to combine.
  6. Cook it on low heat for almost 8 to 10 hours and on high heat for almost 3 to 4 hours.
  7. Add the pepper and salt according to taste and serve it with Guinness.

Tips for making this slow cooker Guinness beef stew

Like with the ultimate beef stew, brown your beef perfectly, and I utilise a chuck roast and sear it on both sides.

Utilise Yukon potatoes, and they are buttery and rich.

I brown the beef in my cast skillet and get the perfect crust on both sides with plenty of black pepper and Kosher salt.

I suggest you Browning it in the insert brown flavour that stays in the pan for your stew, and if not utilising a base, utilise beef stock instead of broth.

Instead of diced and crushed tomatoes, I utilise tomato paste, and it will minimise the liquids and add a bold flavour.
