Variation: although the recipe calls for frozen uncooked shrimp, frozen cooked shrimp can be substituted. Stir cooked shrimp into broccoli halfway through baking time. Bake until hot throughout.
Garlic Shrimp and Broccoli from a Toaster Oven
Here's a fresh, flavorful and colorful main course. Remove the tails prior to baking abd serve with steamed rice.
Arrange shrimp and broccoli in an 8-inch (2 L) baking dish or casserole. Sprinkle with garlic, salt and hot pepper flakes, if using. Drizzle with olive oil. Toss to combine ingredients.
Bake in preheated 400 °F (200 °С) toaster oven for 18 to 20 minutes, stirring once, until broccoli is tender and shrimp are cooked and pink.
Remove from oven, sprinkle with parsley and lemon juice, and toss to combine.
