Garlic Shrimp and Broccoli from a Toaster Oven

Here’s a fresh, flavorful, and colorful main course. Remove the tails prior to baking and serve with steamed rice. You will need a toaster oven to prepare this.

Variation: although the recipe calls for frozen uncooked shrimp, frozen cooked shrimp can be substituted. Stir cooked shrimp into broccoli halfway through baking time. Bake until hot throughout.

  • Arrange shrimp and broccoli in an 8-inch (2 L) baking dish or casserole. Sprinkle with garlic, salt and hot pepper flakes, if using. Drizzle with olive oil. Toss to combine ingredients.
  • Bake in preheated 400 °F (200 °С) toaster oven for 18 to 20 minutes, stirring once, until broccoli is tender and shrimp are cooked and pink.
  • Remove from oven, sprinkle with parsley and lemon juice, and toss to combine.
