  • 2 cups unsalted butter
  • cup all-purpose flour
  • 8 cups all-purpose flour divided
  • teaspoons active dry yeast
  • cups milk
  • ½ cup white sugar
  • 2 teaspoon salt
  • 2 large eggs
  • 1 teaspoon lemon extract
  • 1 teaspoon almon extract

Instructions
 

  • Place Buttercream and 2/3 cup flour in a bowl and mix well. Divide into 2 equal portions, then roll each half of the dough between 2 pieces of wax paper into a 6×12 inch sheet. Chill in refrigerator for 15 minutes.
  • Active dry yeast should be combined with three cups of flour before the dough is allowed to rest.
  • Milk, sugar, and salt are combined in a small pot over medium heat. Heat to about 115 degrees F, or until warm but not hot to the touch (43 degrees C).
  • Pour the warm milk mixture over the flour mixture. Add eggs, lemon extract, and almond extract. Stir for 3 to 4 minutes until ingredients are well mixed. Knead the rest of the dough, 1/2 cup at a time, until the dough is soft and doesn't stick too much. Cover and at room temperature until doubled in size, 30 minutes to 1 hour.
  • Half the dough, as in. Make a 14-inch square out of each part. Each dough square should have 1 layer of cold butter placed over it to one side. Then, fold the dough over the butter like a book cover. With your fingers, firmly pinch the dough's edges together.
  • Each piece should be rolled out to a 20×12-inch rectangle. Like a letter, fold in thirds. One more time, repeat the rolling and folding. Refrigerate for at least 30 minutes after wrapping in plastic

  • Roll out the dough to a thickness of 1/4 inch. squares of dough to be cut. Put some fruit preserves in the middle.
