Here are some of the tips I use to prepare my pioneer woman ham salad:

●Soak your shallots in ice water for 30 minutes to reduce their pungent taste and become crispier. If you don’t have shallots, you can use onions. Both are fine, but onions have more sting, and so I prefer shallots.

● Refrigerate salad for 4 hrs to stay crispy, soak in the flavors, and become cool and crunchy. I tend to find that it becomes much tastier when the salad is extra cold.

●When I don’t have mayonnaise, I use Greek yogurt. It also enhances the flavors and is a perfect blend with the pioneer woman ham salad. If you want to try it, go for the full-fat Greek yogurt.

●To make the ham smoother, use a meat blender or food processor. You can still chop it up with a knife but it will take more time to make tiny pieces for a smoother spread.

●To make your ham salad colorful and add more flavor and crunchiness, you can add 1/4 cup of red bell pepper.

●If you want a sandwich, you can split a flaky biscuit or white bread, top up with a lettuce leaf, and then your pioneer woman ham salad.

●If eggs are not your thing or you want to lower the calories, skip them. It will still be a yummy ham salad.

●2 cups, ground or finely chopped ham

●3 large boiled eggs, chopped

●2 tablespoons Relish

●1tablespoon Mustard

●1/2 cup Mayonnaise

●Lemon juice (half lemon squeeze)

●1 shallot, minced, then soaked in ice water (and rinsed after 30 minutes)

●1 tablespoon Parsley, chopped

●1 stalk celery. chopped

●Salt and Pepper

2.Add the mustard, mayonnaise, and lemon juice. Mix well, then add salt and pepper.

I prepare a lot of ham salad to use more than once at my convenience; especially when I have to take a quick snack and rush off to the office.

With proper storage, yours too can stay fresh for a couple of days.

However, if you notice the salad has developed an odd smell or appearance, chances are, it has gone bad.

Remember, this dish is highly perishable and may start to spoil within two hours after preparation if let to stay at room temperature.

Likewise, If it stays for too long in the fridge and you notice molds, it’s time to discard it.

So here are tips for safe storage, but the most important thing is to refrigerate within two hours or as soon as possible.

Fridge

1.Put the leftover salad in airtight containers and refrigerate.

2.Store for 3-5 days.

Freezer

For the best storage in the freezer, you will need the following items:

●paper towel

●freezer or masking tape

●Plastic container with an airtight lid

●plastic freezer bag (optional)

Steps

1.Put your leftover pioneer woman ham salad in the plastic container, allowing some space for expansion ( 1/2 inch or so).

2.Using the paper towel, wipe any spillage on the container rim so that you close it airtight.

3.Place the container in the freezer bag for more protection from moisture and freeze burn.

4.Write the date on the masking or freezer tape and attach it to the freezer bag. This is to help you keep track of the freezing days.

5.Freeze at 0 degrees F for one to two months.

Note that the pioneer woman ham salad’s texture might change after freezing, but don’t worry because it is safe to eat.
