Parmesan chicken
Four breaded cutlets

 

Grapeseed or avocado oil, 1/4 cup (for frying)

 

1-2 tbsp. Tomato sauce

 

Two 8-ounce fresh mozzarella balls (cut into 3/4-inch thick rounds)

 

For Spaghetti
One pound Spaghetti (dry)

 

Olive oil, one tbsp.

 

Finely chopped parsley, one tbsp.

 

Chiffonade basil, one tablespoon

 

Parmesan cheese, grated (1 ounce)

For Sauce
