  • 2 cups white sugar
  • 3/4 cup water
  • 1/4 teaspoon cream of tartar
  • 1 dash salt

Instructions
 

  • In a sizable, heavy pan, combine all the ingredients. Stir and heat until boiling. To get sugar crystals off the sides of the pan, lower the heat to a simmer and cover the pan for three minutes.
  • Uncover and continue to cook till softball stage (235 degrees F on a candy thermometer). often stir.
