Chicken Tempura Roll
Ingredients
- 2 cup sushi rice
- ½ Cup Rice vinegar
- ½ Pound frozen breaded chicken tenders
- 2 tablespoons reduced-sodium soy sauce
- ½ teaspoon crushed Red pepper flakes
- ¼ Cup sugar
- 1 teaspoon minced fresh ginger root
- 1 teaspoon salt
- ⅔ Cup Thawed orange juice concentrate
- 1 ½ Cups sliced almonds chopped and toasted
- 3 green onions
- 1 large navel orange peeled and sliced into pieces
- ½ teaspoon sesame oil
- Bamboo sushi mat
- 1 small sweet red pepper julienned
Instructions
- Take a plastic wrap and cover the bamboo sushi mat.
- Spread ¼ cup of almonds evenly on the plastic wrap to form a rectangular layer of 9 inches by 6 inches. Moisten your hands with the vinegar mixture you set aside. Next, press rice in a thin even layer over the almonds.
- Take a small amount of the chicken, orange strips, red pepper, and onion, and arrange about 1 ½ in. from the bottom edge of the rectangle.
