  1.  On a shallow plate with a rim, combine flour, salt, and pepper. Pour egg wash onto a second plate.

  3. Dip chicken pieces on both sides in flour mixture, then into beaten egg, shaking off excess.
  4. Roll in breadcrumb mixture, pressing crumbs in lightly.
  5. Discard a y excess flour mixture, egg wash, and breadcrumb mixture.
  6. Brush parchment- or foil-lined oven pan with half the oil. Arrange breaded chicken in a single layer, without crowding pieces. Drizzle with remaining oil.
  7. Bake in preheated 400 °F (200 °С) toaster oven for 20 to 25 minutes, turning partway through, until golden and no longer pink inside.
