1 pound navy beans, dry (or Great Northern beans)

 

1 large diced onion (about 1 34 cups)

 

3 chopped celery stalks (about 1 cup)

 

1 medium sliced carrot (about 12 cups)

 

2 garlic cloves, minced

 

1 leaf of bay

 

1 smoked ham hock, big (or ham bone)

 

4 to 6 glasses of water

 

1 tsp. Italian spices

 

1 cup ham, chopped

 

Season with salt and pepper to taste.

 

.Instructions:.

1.Soak the beans in water overnight (the water should come up to a few inches above the beans). Before cooking, drain the beans in a colander.

 

2.In the slow cooker, combine the beans, onions, celery, carrots, garlic, bay leaf, and ham hock.

 

3.Fill the slow cooker halfway with water, just enough to cover the beans.

 

4.Cover and cook on high for 5-12 hours or low for 7-12 hours, or until beans are cooked and falling apart.

 

5.Remove any meat from the ham hock or bone from the slow cooker.

 

6.Chop the meat and combine it with the Italian seasoning, the remaining chopped ham, salt, and pepper in the slow cooker.

 

7.Cook for another 30 minutes covered.

.Notes:.

1.For the ultimate comfort food, top the soup with chopped green onions and serve with a crusty slice of sourdough bread.

 

2.To make the beans on the stovetop, soak them as directed. Then, in a large Dutch oven, combine all of the ingredients except the diced ham. Bring to a boil over medium-high heat, then lower to low heat and continue to cook for 80-90 minutes, or until the beans are completely soft. Remove the ham hock and discard it, then add the ham and season to taste.

 

3.To make in the Instant Pot, soak the beans according to the package directions. Then, except for the chopped ham, put everything in the Instant Pot, seal it, and set it to manual high pressure for 30 minutes. Allow the pressure to naturally dissipate.
