4- carrots, medium (chopped into 1-inch pieces)

 

2 Yukon gold or red potatoes, medium (chopped into 1-inch pieces)

 

paprika, 2- tablespoons

 

2- tablespoons powdered garlic

 

1- teaspoon powdered – onion

 

1- teaspoon dried oregano

 

1- teaspoon dried thyme

 

1- teaspoon salt

 

½ teaspoon pepper

 

4-pound chicken, entire

 

1- tablespoon extra-virgin olive oil

 

12 lemons (cut in half)

 

fresh rosemary or thyme, 4-6 sprigs

Optional Gravy Ingredients:.

2 tbsp butter (unsalted) (optional-, for gravy)

 

2 tbsp flour (all-purpose) (optional, for gravy)

 

.Instructions.

1.In the slow cooker’s bottom: Place the onion, carrots, and potatoes. As much as feasible, arrange them in a single layer.

 

2.Combine the spice rub ingredients in a small bowl: paprika, garlic powder, onion powder, dried oregano, dried thyme, salt, and pepper.
