Ingredients
For the sandwich:
- 2 baguettes fresh
- 6 eggs hard-cooked, sliced
- 1 lettuce
For the Tuna Salad:
- 2 cans tuna
- 1 red onion chopped
- ½ cup mayonnaise
- ⅓ cup dillweed finely chopped
- 2 tablespoons lemon juice
For the Corn Salad:
- 6 pickles diced
- 2 tomatoes sliced
- 1 green onion chopped
- ½ cup canned sweet corn
- ⅓ cup olives chopped
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- Fill a saucepan with cold water and add the eggs. The eggs should be completely covered with water. Turn the stove to high heat and bring to a boil. Turn off the heat, cover the saucepan and leave it for 10 minutes.
- Cool the eggs in a bowl of cold water (or ice water) for a few minutes. Peel the shells and slice the eggs.
- To make a tuna salad first you need to drain water or oil out of canned tuna. Mix well drained tuna with chopped onion and mayonnaise in a medium size bowl. Add fresh dill and squeezed lemon juice and combine.
- In another bowl mix together sliced tomato, diced pickles, corn and chopped olives and season with some salt and pepper.
- Cut baguettes in half to make four sandwiches and then slice each half. Take a piece of bread and put a few lettuce leaves and two spoons of tuna salad on top. Add a layer of corn salad and a few slices of eggs. Add another layer of lettuce leaves and top with the other half of baguette. Enjoy!
