½ Cup Rice vinegar

 

½ Pound frozen breaded chicken tenders

 

2 tablespoons reduced-sodium soy sauce

 

½ teaspoon crushed Red pepper flakes

 

¼ Cup sugar

 

1 teaspoon minced fresh ginger root

 

1 teaspoon salt

 

⅔ Cup Thawed orange juice concentrate

 

1 ½ Cups sliced almonds ( chopped and toasted)

 

3 green onions

 

1 large navel orange peeled and sliced into pieces

 

½ teaspoon sesame oil

 

Bamboo sushi mat

 

1 small sweet red pepper (julienned)

 

Preparation material

Below are the kitchen tools needed to prepare the ingredients:

Saucepan

 

Plastic wrap

 

Sharp knife

 

Bamboo mat for rolling the sushi

 

Cutting board

 

A large bowl

 

Preparing the rice

1.Wash the rice in a large bowl of cold water, rinsing until the water is clear. Now, transfer the rice to a large saucepan.

 

2.Add 2 cups of water to the rice and leave it for 30 minutes.

 

3.Cover the saucepan and cook the rice in high heat until it comes to a boil. Next, lower the heat and simmer gently for 15 to 20 minutes or until the rice absorbs the water. Let it remain covered for about 10 minutes.

 

4.In a small bowl, mix the salt, sugar, and vinegar, and stir until the sugar is dissolved.

 

5.Take the rice and transfer it to a large shallow bowl, then sprinkle it with ⅓ cup of your vinegar mixture. Use a spoon or a wooden paddle and stir the rice in a dividing motion to cool it. Thereafter, cover it with a damp towel to keep it moist.

 

Preparing the chicken tenders

1.Bake the chicken by following the instructions on the package.

 

2.Cut the baked chicken into long thin strips.

 

3.Mix the juice concentrate, pepper flakes, ginger, soy sauce, and oil in a large bowl. Set aside ½ cup of this mixture for serving.

 

4.Add the chicken slices to the remaining juice mixture and toss them in the bowl to coat evenly.

 

Making the Chicken tempura roll

1.Take a plastic wrap and cover the bamboo sushi mat.

 

2.Spread ¼ cup of almonds evenly on the plastic wrap to form a rectangular layer of 9 inches by 6 inches. Moisten your hands with the vinegar mixture you set aside. Next, press rice in a thin even layer over the almonds.

 

3.Take a small amount of the chicken, orange strips, red pepper, and onion, and arrange about 1 ½ in. from the bottom edge of the rectangle.

 

4.While holding the bamboo mat, roll the rectangle away from you, carefully enough to enclose the filling with rice. Apply pressure to help squeeze the roll so that it becomes compact.

 

5.Now remove the mat, and you have made your chicken tempura roll. Slice into smaller pieces and repeat the process to make other rolls.

 

6.Serve with the sauce you reserved earlier.
