  3. Next, make the ice cream base. Combine the cream, milk, and 1/2 cup of sugar in a saucepan over medium heat. Cook the mixture until it comes to a simmer, then remove from the heat.
  4. Whisk together the egg yolks and remaining 1/2 cup sugar in a bowl until pale and thick. Slowly pour the hot cream mixture into the yolks, whisking constantly. Then add the vanilla and salt, and whisk to combine.
  5. Pour the mixture back into the saucepan, and cook over low heat until it thickens enough to coat the back of a spoon. Remove from heat, and stir in the caramel sauce.
  6. Pour the mixture into a container, and freeze for at least 6 hours or overnight. When you’re ready to serve, scoop the ice cream into bowls and garnish with a sprinkle of salt. Enjoy!
