This tasty pastry is popular in Japan, but its origin traces back to Denmark.

It is ideal both as a sumptuous breakfast or as a snack.

Unlike ordinary bread, the Apple Danish has sweet apple fillings that give it a delightful taste.

The following recipe is for the Home bakery Supreme ( BB-CEC20) Breadmaker.

The ingredients are enough to make 18 pastries.

Ingredients:

For the dough

●2-¼ Cups bread flour (288g)

●1 cup all-purpose flour (130g)

●1-½ teaspoons active dry yeast (4.2g) or 2 teaspoons rapid rise yeast (6g)

●3 tablespoons dry milk (12g)

●3 tablespoons butter (42g)

●3 tablespoons sugar (35g)

●1 teaspoon salt (5.6g)

●2 large eggs, beaten (100g)

●⅔ Cup water (160 ml)

For the fillings

●⅓ Cup water

●3 Tablespoons butter

●½ tablespoon cinnamon powder

●⅔ cup sugar

●1 tablespoon cornstarch

●3 large granny smith apples (peeled and ½ inch diced)

For kneading into dough:

1 Cup of butter (227g), softened

For the egg glaze:

●1 large egg, beaten (50g)

●4 tablespoons (18ml)

For the topping, you can use powdered sugar, but it’s optional.

Preparation

1. Preparing the dough: Follow the package instructions to prepare the dough using the ingredients prescribed.

2. Making the apple fillings:

In a medium-size saucepan, mix cornstarch, cinnamon, sugar, and water.

Put the saucepan on medium heat, and stir the contents till you bring it to a boil.

Let it cook for 1 more minute, then add in half the apples.

Continue boiling over medium-high heat and stir often as it cooks for 8 minutes, or until soft.

Add the rest of the apple and cook for 6 more minutes.

Remove from the heat and add butter. Stir to dissolve the butter and set aside.

3. Take the dough from the baking pan and place it in a greased bowl.

Cover the bowl well with plastic wrap and put it in the refrigerator.

If you are using the 2-lb. bread-maker, let the dough rest for 30 minutes and 20 minutes for the 1-lb. bread-maker.

4. Lightly sprinkle your board and roll the dough into a rectangle.

For the 2-lb. bread-maker, roll the dough into a 20” x 14” sheet, and 13” x 14” sheet for the 1-lb. bread-maker.

Apply ⅓ cup of the softened butter to ⅔ of the sheet and leave the remaining sheet unbuttered for folding later.

5. Fold the sheet starting from the unbuttered side.

Fold into thirds and repeat step 4 above two more times.

Make sure that you are adding flour on the rolling board as needed so that the dough doesn’t stick to it.

Wrap completely with plastic wrap and put it in the refrigerator.

For a 2-lb. Breadmaker, refrigerate from 1 to 2 hours, or overnight.

For a 1-lb. Breadmaker, refrigerate for 20 minutes.

6. Cut the sheets into squares.

For 2-lb. Breadmaker, cut the sheet 3 times, and roll the pieces into 10-½ “ rectangles x 7” rectangles.

Now, cut each rectangle into 6 square pieces, each about 3-½ “ wide.

For the 1-lb.Bread-maker, cut the sheet into two and roll each piece into a 7” x 7” square.

Finally, cut each square into 4 small squares, each about 3-½ “ wide.

7. Line the baking sheet with parchment paper and place the squares on it.

Fold the squares in each corner toward the center and press lightly to set.

Spray with water and put in a warm place for 40-50 minutes so that they double in size, then brush with the egg glaze.

8. Put spoonfuls of the apple fillings in the center of each pastry, then bake in an oven (375°F) for 12 minutes, or until they become flaky and golden brown.

Remove the pastries from the oven and place them on a rack to cool.

You can dust with powdered sugar topping if you prefer.
