These are great with vinegar and ketchup. You will need a toaster oven.
About Salt and Seasonings
Many types of salt are widely available. Kosher salt is mild, with small crystals, and is not as salty as regular table salt. If you have it, try it. A wide variety of mixed seasonings, often used for meat, fish, and poultry, is available in the spice section. Try one of these in place of salt. Do not use both, or the potatoes will be too salty.
Potatoes Fried in a Toaster Oven

Ingredients
- 2 large potatoes
- 1 ½ tbsp olive oil
- ¾ tsp salt or other seasonings (see box)
- ¼ tsp black pepper
Instructions
- Cut potatoes in half lengthwise, then cut each half lengthwise into 4 wedges. Place on parchment-lined oven pan. Add oil, salt and pepper, toss and turn potatoes to coat with oil, then arrange in a single layer, with a cut side down.
- Bake in preheated 400 °F (200 °С) toaster oven for 35 to 40 minutes, turning after 20 minutes onto another cut side, until potatoes are tender and golden brown. (Timing depends on size of wedges.) Transfer to serving dishes. Potatoes will be very hot.
