●2 gallons of whole milk
●1 pound butter (4 sticks)
●1 1/2 cups all-purpose flour

●1/2 teaspoon cayenne pepper, plus more to taste
●8 ounces shredded Cheddar cheese
●8 ounces shredded Monterey Jack cheese
